We have our gluten free products tested for gluten, by Microsearch Laboratories who are based in Mytholmroyd. Their testing confirms that our gluten free products have less than 3 parts per million of gluten. The Coeliac Society specify that products can only be classed as gluten free, if they have less than 20 ppm of gluten, so ours are well under that level.
We also: –
- follow stringent polices and practices to ensure that we are “preventing the possibility of any potential cross-contamination of allergens” at all times.
- ensure that all ingredients which may or do contain gluten within our production unit, are stored in their original packaging separately from all our other ingredients.
- make each product individually. We clean down all areas and weighing machines thoroughly between each product regardless of what we’re making.
- regularly test the effectiveness of our cleaning and record the results in our online software.
- ensure that each of our grains, rice and other larger quantity ingredients have their own weighing machine. And we use a different set of spoons for measuring the stocks, herbs and spices for each product (we have lots of washing up to do!).
- plan the products we’re making each day; staff ensure that all gluten free products are always made first or (depending on how busy we are) on a separate day to anything with gluten in it.
- go through a stringent external audit by SALSA. This ensures that our polices and procedures are working year on year and also confirms that we are a Safe and Local Supplier.
